Instructions
1. Cook the Beef:
- In a pan, cook the ground beef over medium heat until browned, breaking it up into small pieces as it cooks.
- Once the beef is cooked, add the taco seasoning and salsa. Stir and let it simmer for about 5 minutes, allowing the flavors to blend. Remove from heat and set aside.
2. Prepare the Ingredients:
- Preheat your oven to 350°F and spray a 9×13-inch casserole dish with non-stick cooking spray.
- Dice the peppers and onions.
- Cut each biscuit into 6 small pieces.
3. Assemble the Casserole:
- Place half of the biscuit pieces in the bottom of the prepared casserole dish.
- Top with half of the beef and salsa mixture, followed by half of the diced peppers and onions, and then half of the shredded cheese.
- Repeat the layers with the remaining biscuit pieces, meat mixture, peppers and onions, and cheese.
- Sprinkle the chopped green onions over the top as the final layer.
4. Bake:
- Loosely cover the casserole with foil and bake in the preheated oven for 35 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the biscuits are fully cooked and golden brown on top.
- Let the casserole cool for about 5 minutes before slicing it into 6 servings.
5. Serve:
- Optionally, top with a spoonful of fat-free sour cream before serving for extra creaminess.
