Ingredients
- 1 ¼ cups almond flour (125 grams)
- ⅓ cup granulated erythritol (60 grams)

- 2 eggs (room temperature)
- 2 tablespoons coconut oil (melted)
- 2 tablespoons unsweetened almond milk
- ½ teaspoon vanilla extract
- ¼ teaspoon liquid stevia
Cinnamon Sugar Coating
- 4 tablespoons granulated erythritol
- 1 ½ teaspoons cinnamon
Instructions
- Prepare the dry ingredients: In a large bowl, whisk together the almond flour, erythritol, baking powder, xanthan gum, and salt.
- Combine the wet ingredients: In a medium bowl, lightly beat the eggs. Then, whisk in the melted coconut oil, almond milk, vanilla extract, and liquid stevia.
- Mix the wet and dry ingredients: Pour the wet mixture into the bowl with the dry ingredients and stir until fully combined.
- Preheat the air fryer: Set your air fryer to 330°F (165°C) and preheat for 3 minutes. While it’s preheating, spray your donut pans or molds with avocado oil to prevent sticking.
- Fill the donut pan: Pipe the batter into the donut cavities, filling them about ¾ full. Tap the pan gently on the counter to settle the batter and remove any air bubbles.
- Bake the donuts: Place the pan in the air fryer and bake at 330°F for 8 minutes. Check for doneness with a toothpick. Depending on your air fryer size, you may need to bake the donuts in batches (for example, 4 donuts first, then the remaining 2).
- Cool and coat: After baking, remove the donuts from the air fryer and let them cool in the pan for 5 minutes. Meanwhile, mix the erythritol and cinnamon together in a small bowl.
- Coat with cinnamon sugar: After the donuts have cooled, carefully remove them from the pan and coat both sides in the cinnamon-sugar mixture.
- Final air fry for crispiness: Place the coated donuts back in the air fryer with the flatter side down. Bake at 350°F for 2 minutes. Then, immediately coat the donuts with the cinnamon sugar one final time.
