Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

For the filling:

  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • ¼ cup cornstarch
  • ¼ tsp salt
  • 2 ¾ cups whole milk
  • 4 large egg yolks
  • 1 cup semi-sweet chocolate chips (or chopped chocolate)
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

For topping (optional):

  • Whipped cream or chocolate shavings

Instructions:

  1. Make the crust:
    • Preheat oven to 175°C (350°F).
    • In a bowl, mix the crumbs, sugar, and melted butter.
    • Press mixture into a 9-inch pie dish.
    • Bake for 8–10 minutes. Let cool completely.
  2. Make the filling:
    • In a saucepan, whisk sugar, cocoa, cornstarch, and salt.
    • Slowly whisk in milk and egg yolks until smooth.
    • Cook over medium heat, whisking constantly, until it thickens (about 8–10 minutes).
    • Remove from heat and stir in chocolate chips, butter, and vanilla. Stir until smooth.
  3. Assemble:
    • Pour hot filling into the cooled crust.
    • Cover the surface with plastic wrap (touching the filling to avoid a skin forming).
    • Chill in fridge for at least 4 hours or until fully set.
