Cheesy Mashed Potato Puffs

Ingredients

  • 2 cups mashed potatoes (about 4 medium potatoes, cooked and mashed)
  • 1 large egg
  • ½ cup shredded cheddar cheese (or mozzarella)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped green onions (optional)
  • ¼ cup sour cream or Greek yogurt
  • 2 tbsp butter, melted
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • Non-stick spray or butter (for greasing the muffin tin)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with parchment liners.
  2. In a large bowl, mix together mashed potatoes, egg, cheeses, sour cream, butter, garlic powder, salt, and pepper until smooth.
  3. Spoon the mixture evenly into the muffin cups. Fill each about ¾ full.
  4. Sprinkle extra cheese on top if desired.
  5. Bake for 20–25 minutes, until puffed, golden, and crispy around the edges.
  6. Let cool slightly before removing from the pan. Serve warm.

Tips

  • For extra crispiness, sprinkle a little Parmesan on top before baking.
  • Can be made in an air fryer at 375°F (190°C) for about 12–15 minutes.
  • Serve with sour cream, ketchup, or ranch dip.
