Cheesy Mashed Potato Puffs
Ingredients
- 2 cups mashed potatoes (about 4 medium potatoes, cooked and mashed)
- 1 large egg
- ½ cup shredded cheddar cheese (or mozzarella)
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped green onions (optional)
- ¼ cup sour cream or Greek yogurt
- 2 tbsp butter, melted
- ½ tsp garlic powder
- Salt & black pepper, to taste
- Non-stick spray or butter (for greasing the muffin tin)
Instructions
- Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with parchment liners.
- In a large bowl, mix together mashed potatoes, egg, cheeses, sour cream, butter, garlic powder, salt, and pepper until smooth.
- Spoon the mixture evenly into the muffin cups. Fill each about ¾ full.
- Sprinkle extra cheese on top if desired.
- Bake for 20–25 minutes, until puffed, golden, and crispy around the edges.
- Let cool slightly before removing from the pan. Serve warm.
Tips
- For extra crispiness, sprinkle a little Parmesan on top before baking.
- Can be made in an air fryer at 375°F (190°C) for about 12–15 minutes.
- Serve with sour cream, ketchup, or ranch dip.
